With a focus on healthy and hearty fare, food and beverage manager Anita Wan, has crafted some delectable new menu items to tempt the taste buds of Iron Mountain’s visitors.

“We understand that our guests primarily come to soak and relax,” explained Wan. “But we like to provide them with something to nibble on while they’re here.” For those in need of a mid-soak snack, the Sopris Café has plenty to satisfy the appetite.

Menu Makes Room for New Flavors

The stars of the Sopris Café spring menu are the quinoa salads, which come in three delicious varieties: Asian, Mediterranean, and Southwest.

  • The Asian salad’s main protein is grilled chicken and includes quinoa, sugar snap peas, cucumbers, red peppers, carrots, red cabbage and is topped with toasted sesame dressing.
  • The Mediterranean is veggie-based and comes with garbanzo beans, quinoa, kale, cucumber, red onions, artichokes, grape tomatoes, feta cheese and balsamic dressing.
  • The Southwest features chipotle bbq tofu, quinoa, jicama, red and yellow peppers, cucumber, red onions, carrots, kale and dressing with a cilantro vinaigrette.

Some items that will be making the rounds on the daily specials board at the Sopris Cafe include the Chipotle BBQ Pork Burnt Ends Sandwich on a telera roll with pickled onions and jalapenos served with a side of jicama slaw with cilantro vinaigrette. The other item that Wan said will make a regular appearance is the Greek Flatbread Pizza which has garlicky chicken, artichokes, red peppers, red onions mozzarella and feta cheese with a Tzaziki sauce drizzle.
